Recipes: Blackberry Cobbler

Blackberry cobbler

High summer is blackberry season, and cobbler is an easy way to enjoy them. It's terrific by itself. With a scoop of vanilla and/or some fresh whipped cream? Crazy good! 

For the filling:
3-1/2 to 4 cups fresh blackberries, rinsed and dried
1/2 cup water
2 tablespoons sugar
1 tablespoon cornstarch
1 teaspoon vanilla

For the topping:
1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup butter (a half stick), chilled
1/4 cup milk
1 egg 


Prepare the berries: 
In a small sauce pan, combine the berries, water, sugar, cornstarch, and vanilla. Bring to a boil then simmer, stirring constantly until the mixture thickens.

Prepare the topping:
Mix flour, sugar, baking powder, baking soda, and salt. Using a pastry blender, cut the butter into the mix until it looks like coarse crumbs. (Or, use a food processor.) Beat the egg, stir in the milk, then add both to the butter/flour mixture. Stir until just combined.

Assemble:
Pour the filling into an 8" baking dish. Spoon the topping on in 6-8 clumps, leaving the filling exposed in places.

Bake:
Heat oven to 400F and back for about 20 minutes, until the topping is crisp and golden. Cool before eating.
