The "award-winning" étouffée recipe comes from L'Acadie Inn & Park in Eunice, owned by Kelly and Lance Pitre. It took second place in the Professional Division at the annual World Championship Crawfish Etouffee Cook-off last year. The Pitres are considered real Cajun cooking pros, and have also landed several winning titles throughout the years.
Multi-instrumentalist Carlos Malta is in town. The sax and flute virtuoso is performing at UNO on Wednesday and will also perform two sets at Snug Harbor Thursday. WWOZ will broadcast the second set LIVE in case you are unable to attend.
One of Brazil's most respected musicians, Malta is a composer, performer, arranger, band leader and music educator who has performed all over the world.
